Cashew-Arugula Pesto

  • 2 cups arugula
  • 1/2 cup unsalted, toasted cashews
  • 1 clove garlic
  • 1/3 cup EVOO
  • 1/4 cup parmesan
  • Salt and pepper


Puree arugula, cashews, garlic and EVOO until they form a paste. Mix in parmesan; season with salt and pepper. Toss with pasta, spoon over grilled fish or spread on pizza crust before adding other toppings.
