Spiced Carrot-Ribbon Salad
These carrots are ready to party! Put your vegetable peeler to work to make this gorgeous side dish.
Ingredients
1 tsp. cumin seeds
4 tsp. olive oil
1/2 tsp. garam masala
2 1/2 tbsp. honey
1 tbsp. fresh lemon juice
2 lb. multicolored carrots, shaved into ribbons with vegetable peeler
1/2 cup chopped fresh cilantro
Preparation
In small saucepan, toast cumin seeds in oil over medium until fragrant, 1 to 2 minutes. Stir in garam masala, then honey and lemon juice; season dressing. In large bowl, toss carrot ribbons, dressing, and cilantro; season.
