Ingredients

  • 1 cup chopped red onion
  • 1/2 cup self-rising flour
  • 1/2 cup grated carrot
  • 1 egg
  • 3 jarred cherry peppers, drained and chopped
  • 2 tbsp. cornmeal
  • 1 1/4 cups sour cream
  • 1/4 cup chopped fresh mint
  • 4 cups vegetable oil

Preparation

In bowl, mix first 6 ingredients with 1/4 cup sour cream; season. In processor, pulse remaining 1 cup sour cream and mint; season. In large saucepan, heat oil to 360°. Fry batter by the tablespoon, turning once, until golden, 5 minutes; season. Serve with mint sauce.
