Carrot, Apple & Ginger Soup

Ingredients
- 1 onion, chopped
- 2 tablespoons chopped fresh ginger
- 2 tablespoons olive oil
- 3/4 teaspoon curry powder
- 4 cups chicken stock
- 1 pound carrots, chopped
- 1 red apple, peeled and chopped
- 1/4 cup plain yogurt
- cilantro leaves, for garnish
Preparation
In pot, cook first 4 ingredients over medium-high, stirring often, 5 minutes. Add next 3 ingredients. Season; bring to boil. Simmer, covered, until carrots are tender, about 20 minutes. Puree in blender; season. Top with yogurt and cilantro.
