In medium saucepan, heat brown sugar, butter, half-and-half, vanilla, and 1 tsp. salt over medium-high, stirring constantly, until sugar dissolves. Bring to boil. Cook, stirring constantly, until sauce thickens, about 5 minutes. Let stand until cool enough to touch, about 10 minutes. Toss apples with lemon juice; arrange on platter. Drizzle sauce over apples. Top with pepitas and sprinkles.
