California-Style Turkey-Bean Burgers

Ingredients
- 1 1/2 cups Tex-Mex Black Beans, thawed and chilled
- 12 oz. ground turkey
- Cooking spray
- 4 slices sharp cheddar
- 4 hamburger buns, toasted
- 1 avocado, sliced
- 2/3 cup salsa verde
- 5 oz. mesclun
- 2 tbsp. bottled vinaigrette
Preparation
1. Make Big-Batch Tex-Mex Black Beans and portion out 1 1/2 cups for this recipe.
2. In a medium bowl, smash Tex-Mex Black Beans with a fork; mix in turkey and 1/2 tsp. each salt and pepper. Form into 4 patties and spray with cooking spray. On greased grill, cook over medium until well done, 4 to 5 minutes per side, topping with cheddar during last 2 minutes and tenting with foil to melt. Serve on buns with avocado and salsa. Toss mesclun with vinaigrette; season and serve alongside.
