California Cobb Pasta Salad

Ingredients

Pasta

  • 1 lb. campanelle

Toss-Ins

  • 12 oz. cooked crumbled bacon
  • 4 seeded, chopped plum tomatoes
  • 3 cups chopped hearts of romaine
  • 2 pitted, peeled and chopped avocados
  • 1 1/2 cups crumbled blue cheese
  • Salt and pepper

Dressing

  • 1/2 cup EVOO
  • 3 tbsp. white balsamic vinegar

Preparation

In a large pot of boiling, salted water, cook the pasta according to package directions. Drain, then rinse under cold water. Transfer the pasta to a serving bowl. Mix pasta with the toss-ins and the dressing.
