- 4 6 ounces boneless, skinless chicken breasts, each cut into 3 lengthwise pieces
- 1/2 cup buttermilk
- 1 cup flour
- 2 tablespoons unsalted Cajun seasoning
- 2 cups canola oil
- 4 frozen waffles
- 1/2 cup pure maple syrup, warmed
In medium bowl, combine chicken and buttermilk. In large bowl, whisk flour, Cajun seasoning and 1 tsp. salt. Remove chicken from buttermilk and dredge in flour mixture. In deep skillet, heat oil to 350°. Fry chicken until golden, 4 minutes per side. Toast waffles; transfer to plates. Top with chicken and drizzle with syrup.
