Buttermilk Marinade

  • 2 cups buttermilk
  • 1/4 cup EVOO, plus more for brushing
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • A couple dashes hot sauce, such as Tabasco
  • 4 skin-on salmon fillets (about 1 lb.)


In bowl, mix buttermilk, 1/4 cup EVOO and next 3 ingredients. Add fish; let marinate in fridge 20 minutes. Pat dry, brush with EVOO and season with salt and pepper before grilling.
