- 2 cups buttermilk
- 1/4 cup EVOO, plus more for brushing
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
- A couple dashes hot sauce, such as Tabasco
- 4 skin-on salmon fillets (about 1 lb.)
In bowl, mix buttermilk, 1/4 cup EVOO and next 3 ingredients. Add fish; let marinate in fridge 20 minutes. Pat dry, brush with EVOO and season with salt and pepper before grilling.
