  • 1 (about 1/2 lb.) frozen puff pastry, thawed
  • 1 tablespoon grated Parmesan
  • 1/2 cup shredded mozzarella
  • 4 eggs
  • 20 slices pepperoni


On parchment-lined baking sheet, unfold pastry; pierce all over with a fork. Top with Parmesan. Bake at 400 degrees until pastry edges are golden, 13 minutes. Top with mozzarella, forming 4 wells, and crack 1 egg into each. Scatter pizza with pepperoni. Bake until egg whites are set, 12 minutes; season.
