Blueberry-Tarragon Sparklers

  • 1/2 cup blueberries
  • 1/4 cup honey
  • 2 tablespoons chopped fresh tarragon
  • Ice
  • 2 bottles sparkling white wine


In medium saucepan, bring blueberries, honey, 1/4 cup water and tarragon to boil over medium-high; stir until honey dissolves, about 3 minutes. Off heat, muddle the blueberries and let stand for 20 minutes; strain and let cool. Spoon 1 tbsp. blueberry syrup each into 8 glasses. Add ice, then wine.
