Bloody Mary Breakfast Bake

  • 8 slices soft white sandwich bread, crusts removed
  • 3 cups shredded pepper jack cheese
  • 9 large eggs
  • 2 cups milk
  • 1/2 teaspoon celery salt
  • 1 jar (16 ounces) salsa


Grease a 9-by-13-inch baking dish and arrange 4 slices of bread in the bottom of the dish. Sprinkle 2 cups shredded cheese on top and cover with remaining bread. In a medium bowl, beat together eggs, milk and celery salt, then pour over the bread layer; let stand. Bake in a 375 degrees oven for 25 minutes, then cover with salsa, sprinkle with remaining pepper jack and bake for 5 minutes more. Let stand for 5 minutes before serving.
