  • 1 can (about 15 oz.) black beans (rinsed)

  • 1/4 cup tahini

  • 3 tbsp. lime juice

  • 1 small clove garlic

  • 3 to 4 tbsp. ice water

  • 2 tbsp. olive oil

  • Salt


  • 1/2 cup sliced red onions

  • 1 cup red wine vinegar

  • 1 tbsp. honey

  • 1 tsp. salt + more

  • 1 tbsp. olive oil

  • 1 lb. ground beef

  • 1 tbsp. taco seasoning

  • Pickled jalapeño slices

  • Cilantro


Mix It Up: In a food processor, puree 1 can (about 15 oz.) black beans (rinsed), 1/4 cup tahini, 3 tbsp. lime juice, 1 small clove garlic, and 3 to 4 tbsp. ice water until smooth. With the machine running, drizzle in 2 tbsp. olive oil. Season with salt. Transfer to a bowl.

Top It Off: In a bowl, toss 1/2 cup sliced red onions, 1 cup red wine vinegar, 1 tbsp. honey, and 1 tsp. salt. Let stand for 15 minutes. Drain the onions. In a medium skillet, heat 1 tbsp. olive oil over medium-high. Add 1 lb. ground beef, 1 tbsp. taco seasoning, and 1 tsp. salt. Cook, breaking up the meat with a spoon, until browned, about 8 minutes; season. Top the hummus with the beef and red onions, some pickled jalapeño slices, and cilantro.
