Black Bean Burgers

black bean burgers


  • 1/3 cup onion, chopped
  • 1/3 cup carrots, chopped
  • 1/3 cup mushrooms, chopped
  • 1 tablespoon EVOO
  • 1 tablespoon sriracha
  • 1/2 teaspoon dried oregano
  • Pinch of salt
  • 1 15 ounce can black bean, drained and rinsed
  • 1/2 cup panko
  • 1 egg, beaten
  • Hamburger buns
  • Toppings


Cook onions, carrots and mushrooms in EVOO until tender. Stir in sriracha, oregano and salt. Add 1/2 of the black beans to a bowl and mash. Mix in panko, the remaining beans, the vegetable mixture and egg. Shape into patties. Bake on a greased baking sheet at 450 degrees until crisp, about 15 minutes. Serve on buns with your favorite toppings.
