Bistro Chicken Cutlets

Ingredients

  • 1 pound chicken cutlets
  • 5 tablespoons butter
  • 1/2 cup sliced shallots
  • 1/2 cup chicken stock
  • 1/4 cup chopped cornichons
  • 1 tablespoon fresh thyme
  • 1 tablespoon whole-grain mustard

Preparation

In large skillet, cook cutlets in 2 tbsp. butter over medium, 4 minutes per side. Transfer to platter. In skillet, boil next 5 ingredients until thickened, 5 minutes. Whisk in remaining butter; pour over chicken.
