- 1/3 cup coconut flakes
- 1 pound peaches, cut into 1/4-inch wedges
- 6 ounces blackberries
- 6 ounces blueberries
- 2 cups chopped pineapple
- 1 tablespoon sugar
- 1/4 teaspoon ground cardamom
- Roasted pistachios, coarsely chopped
Preheat the oven to 325 degrees . On a rimmed baking sheet, spread out the coconut flakes; bake until golden, 2 to 4 minutes. Let cool.
In a large bowl, gently toss the peaches, berries, pineapple, sugar and cardamom; let sit 15 minutes. Toss again, then sprinkle with the pistachios and coconut.
