Baked Papaya with Pepitas

  • Fresh papaya
  • Coconut milk
  • Pepitas
  • Fresh lime juice
  • Light brown sugar
  • Confectioners' sugar


Quarter a papaya lengthwise; scoop out seeds. Brush cut sides with coconut milk; sprinkle with pepitas. Bake at 350 degrees until papaya is tender and pepitas are toasted, about 45 minutes. Mix some fresh lime juice with light brown sugar; drizzle over papaya. Dust with confectioners' sugar.
