Baked Oatmeal with Apricots & Cardamom

Ingredients
- 2 cups rolled oats
- 1 cup almonds, chopped
- 1 cup dried apricots, chopped
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1/2 tsp. ground cardamom
- 2 1/4 cups whole milk
- 1/3 cup honey, plus more for serving
- 1 large egg
- 1 tsp. pure vanilla extract
- 3 tbsp. butter, melted
- Plain yogurt, for serving
Preparation
In bowl, mix first 7 ingredients. Spread evenly in greased 8-inch square baking dish. In another bowl, whisk milk, 1/3 cup honey, egg, and vanilla. Pour over oats. Bake at 375° until set, about 30 minutes. Drizzle with butter. Serve oatmeal with yogurt and more honey.
