Baked Basmati with Artichokes & Almonds
This veggie-rice dish comes together in a flash. Just combine ingredients, bake, and dinner is served!
Ingredients
1 1/2 cups boiling water
1 cup basmati rice
1 box (10 oz.) frozen artichokes, thawed and patted dry
1/2 cup chopped shallots
3 tbsp. olive oil
2 cloves garlic, finely chopped
3 tbsp. sliced almonds, toasted
1 lemon, zested (about 1 1/2 tsp.) and juiced (about 1/4 cup)
1 tbsp. chopped fresh flat-leaf parsley leaves
Preparation
In small baking pan, stir first 6 ingredients and 1 tsp. salt. Cover and bake at 400° until rice is tender, about 28 minutes. Using fork, stir in almonds, lemon zest and juice, and parsley. Season with pepper.
