Start to Finish: 10 minutes
Servings: Makes 4 sandwiches
- 1/2 avocado—pitted, peeled, and finely chopped
- 1/2 cup mayonnaise
- 1 small clove garlic, grated
- 1 tsp. fresh lemon juice
- 1/2 tsp. chopped fresh thyme leaves
- 8 slices toast
- 12 slices cooked bacon
- Butter lettuce leaves
- 2 peaches, halved and thinly sliced
In a medium bowl, using a fork, mash the avocado. Whisk in the mayonnaise, garlic, lemon juice, and thyme. Season with pepper. Spread on 1 side of each piece of toast. Build the sandwiches with the toast, bacon, lettuce, and peaches.
