BLP (Bacon, Lettuce & Peach) Sandwiches

There's something magical about the combination of sweet peaches and super-savory pork.

Start to Finish: 10 minutes

Servings: Makes 4 sandwiches 


  • 1/2 avocado—pitted, peeled, and finely chopped
  • 1/2 cup mayonnaise
  • 1 small clove garlic, grated
  • 1 tsp. fresh lemon juice
  • 1/2 tsp. chopped fresh thyme leaves
  • 8 slices toast
  • 12 slices cooked bacon
  • Butter lettuce leaves
  • 2 peaches, halved and thinly sliced


In a medium bowl, using a fork, mash the avocado. Whisk in the mayonnaise, garlic, lemon juice, and thyme. Season with pepper. Spread on 1 side of each piece of toast. Build the sandwiches with the toast, bacon, lettuce, and peaches.
