- 3 tablespoons Neufchatel
- 3 tablespoons plain nonfat Greek yogurt
- 1 baking potato (about 1/2 lb.), scrubbed
- 1 slice uncured bacon, cooked and chopped
- 2 tablespoons chopped fresh chives
In a bowl, whisk Neufchatel and yogurt. Pierce potato all over with a fork and microwave on high until cooked through, about 5 minutes. Halve potato lengthwise; season. Top with Neufchatel mixture, bacon and chives.
