Baby Bella, Bell Pepper & Meatball Soup

  • 3 cups sliced cremini mushrooms
  • 1 large onion, sliced
  • 1 red bell pepper, sliced
  • 2 tbsp. olive oil
  • 6 cups chicken stock
  • 16 thawed Herbed Turkey Meatballs
  • 3 cloves garlic, finely chopped
  • 2 tsp. fresh thyme leaves
  • 4 whole-grain rolls


In pot, cook mushrooms, onion and bell pepper in oil over medium-high, stirring occasionally, until softened, about 8 minutes. Add chicken stock, thawed Herbed Turkey Meatballs, garlic and thyme; bring to a boil. Simmer until flavors meld, about 12 minutes; season. Serve with rolls.
