Asparagus Ribbons

Ingredients

  • Asparagus
  • Fresh mint, chopped
  • Lemon zest
  • Lemon juice
  • EVOO
  • Salt
  • Ricotta

Preparation

Using a vegetable peeler, shave asparagus spears into thin ribbons. Toss with chopped mint, lemon zest, lemon juice, EVOO and salt. Top with ricotta and more lemon zest.
