Arugula, Ham & Gouda Omelet Rolls

Ingredients
- 2 tablespoons butter
- 1/2 small red onion, thinly sliced
- 4 eggs, beaten
- 2 ounces shredded Gouda
- 2 slices deli ham
- 1 1/2 cups arugula
Preparation
In nonstick skillet, melt butter over medium-high. Add onion; cook until softened, 6 minutes. Pour eggs over onion; top with cheese and ham. Cook until cheese melts and eggs set, 6 to 8 minutes. Slide omelet onto cutting board. Top with arugula; season. Let cool 1 minute; roll into log. Cut into 4 slices.
