4 artichokes–stems trimmed, top thirds sliced off and thorns snipped
- 4 lemon quarters plus 2 tsp. lemon juice
- 1/2 cup mayonnaise
- 1 clove garlic, grated
Cook artichokes in boiling, salted water with lemon quarters until outer leaves pull off easily, 30 to 40 minutes. Combine mayo, garlic and lemon juice for dipping sauce.
