Around the World Wraps

  • 3 tablespoons vegetable oil
  • 1 pound ground beef
  • 3 teaspoons curry powder
  • Salt and pepper
  • 12 rice-paper wrappers
  • 3/4 cup shredded carrot
  • 5 scallions, sliced on an angle
  • 1 1/2 cups potato sticks
  • 1 cup flat-leaf parsley, chopped


In a large skillet, heat the oil over medium-high heat. Add the ground beef and curry powder, season with salt and pepper and cook, breaking up the meat, for 5 minutes.

In a bowl of warm water, soak a wrapper for 15 seconds; place on a work surface. Spoon 2 tablespoons beef across the bottom third; top with carrot, scallions, potato sticks and parsley. Roll the bottom flap up over the filling, fold in the sides and finish rolling. Repeat with the remaining wrappers and fillings.
