In a bowl, combine apple, 2 tsp. maple syrup and cinnamon. Cover with parchment and microwave on high until apple is soft, about 2 minutes. In a small bowl, whisk egg, coconut milk, honey and a pinch salt; pour into a small baking dish. Coat bread in egg mixture. In a large nonstick skillet, melt butter over medium. Cook bread until golden, about 3 minutes per side; transfer to a plate. Spoon apple mixture on top of one bread slice; top with remaining bread slice. Drizzle with remaining 1 tsp. syrup.
