Apple-Ginger Granita

  • Sugar
  • Water
  • Fresh ginger, slivered
  • Lime juice
  • Tart apples, such as Honeycrisp, peeled, cored and chunked
  • Mint leaves


Simmer equal parts sugar and water with a few slivers fresh ginger, a squeeze lime juice and chunks of peeled tart apples, such as Honeycrisp, until apples soften, about 15 minutes. Cool, then puree in blender with a few mint leaves; transfer to dish and freeze, scraping with a fork every 30 minutes, until slushy. Garnish with more mint leaves.
