- 1 tablespoon butter
- 3 Granny Smith apples, peeled, cored and thinly sliced
- 1/4 cup (packed) brown sugar
- 1/4 cup granulated sugar
- 1/2 tablespoon ground cinnamon
- 1/2 tablespoon fresh lemon juice
- 1/4 cup mascarpone or plain Greek yogurt
In saucepan, melt butter over medium heat. Add apples and cook 1 minute. Stir in both sugars and cinnamon; simmer 10 minutes. Add lemon juice and remove from heat. Top pancakes with mascarpone and apples.
