Start to Finish: 50 minutes
1 1/2 lb. sushi-grade ahi tuna, finely chopped
1/4 cup finely chopped onion
1 tbsp. chopped fresh basil (preferably Thai basil)
1 tbsp. chopped fresh cilantro
1 tbsp. fish sauce
2 tsp. grated peeled fresh ginger
1 1/2 tsp. toasted sesame oil
1 clove garlic, finely chopped
4 brioche buns or other soft burger buns
Butter lettuce leaves, for topping
2 heirloom tomatoes, sliced, for topping
1. In a medium bowl, mix the tuna, onion, basil, cilantro, fish sauce, ginger, sesame oil, and garlic. Form into 4 patties and place on a plate. Cover and refrigerate for at least 30 minutes or up to 2 hours.
2. Preheat a griddle or grill over medium heat. Grill the burgers until cooked to your liking, 3 to 4 minutes per side for medium. Place the burgers on the bun bottoms. Top with the lettuce, tomatoes, Spicy Pickled Cucumbers, and the bun tops.
