Test Kitchen Challenge: New Riffs on Seasonal Lattes

‘Tis the season for flavored lattes! And while we can’t deny our love for all things pumpkin spice, it is important to diversify your caffeine portfolio. Last week, we asked YOU on social media what seasonal flavors you’d like to have in your morning cup of joe, then took to the test kitchen to start brewing up some recipes. Here were the two faves:

BOURBON PECAN PIE:

The classic pecan pie was by far the most requested flavor we received. In the spirit of keeping things interesting, however, we went ahead and added some bourbon to our version. (It gets cooked down in the simple syrup so it’s not technically very boozy, but if you wanted to add an extra splash at the end, we certainly wouldn’t judge.)

In a small saucepan, add ¼ water, ¼ cup bourbon, 2 Tbsp. dark brown sugar, and 2 Tbsp. light corn syrup. Simmer over medium heat, stirring often, until reduced by about half and thickened slightly, about 5 minutes. Divide among two coffee mugs, add a shot of espresso to each and hot or steamed milk to your taste. Top with whipped cream and a healthy handful of chopped toasted pecans.

CARAMEL APPLE CHAI:

This clever combo was suggested by our Facebook fan, Lorena Lee, and it tastes every bit as good as it sounds! Like fall in a mug.

In a small saucepan, add ¾ cup apple cider, 8 candy caramels (about 2 oz.), ½ tsp. ground cardamom, ¼ tsp. ground allspice, and 1 cinnamon stick. Simmer over medium heat until the caramels melt and the mixture has thickened, about 8 minutes. Remove cinnamon stick and reserve 1 Tbsp. of the caramel syrup. Divide the rest among two coffee mugs. Add a shot of espresso to each and hot or steamed milk to your taste. Top with whipped cream and drizzle with remaining caramel syrup. Garnish with cinnamon stick, if desired.
