When it comes to pumpkin spice, I can take it or leave it. I probably won't buy a PSL this season, but I've been loving a few of the pumpkin spice treats that have landed on my desk this month. So for every October Food Fave, I'll be choosing a pumpkin spice snack that I'd gladly eat all year long. And let me tell you, Emmy's Organics Pumpkin Spice Coconut Cookies is one of those snacks.
Besides pumpkin spice, I love all of Emmy's cookies (peanut butter is my favorite year-round flavor). They taste just like coconut macaroons, come in a variety of flavors and are made with organic, real food (each cookie has fewer than ten ingredients) like organic coconut, organic coconut oil, and organic almond flour. And better yet, despite being super moist, they don't crumble or fall apart as you take a bite.
And sure, the desserts fall into all the trendy healthy treat categories right now: Besides being certified USDA organic, they're vegan, gluten-free, grain-free, and non-GMO, but what really stands out is just how plain delicious they are. The pumpkin spice flavor tastes like pumpkin pie in the beginning, and ends with a delightful coconut finish. It's crazy-good on its own as an after-lunch treat, but I've also heard they're delicious chopped up in breakfast parfaits or with a dollop of coconut yogurt on top.
My only complaint? I've never been able to eat just one.
