Step 1:
Trim off the root end and the tough dark green leaves.

Step 2: Cut in half lengthwise.

Step 3: Slice crosswise into small pieces.

Step 4: Swish the leeks around in a bowl of cool water, then let 'em soak. As they sit, the grit will sink. Scoop them out with a slotted spoon, being careful not to disturb the dirt.
