Crazy for Cobblers
When I'm looking for an easy summer dessert, I almost always turn to a cobbler and according to Yahoo! Web Trend Expert, Carolyn Clark, I'm not the only one who's crazy for these tasty desserts. In the past month, searches have been spiking as people hunt for their perfect peach, blueberry or blackberry cobbler recipe. It's all with good reason though, as peaches and berries are currently in season.
So what exactly is a cobbler? A cobbler is a baked fruit dessert topped with a batter or a biscuit crust. As the topping is often dropped or spooned in small clumps the crust appears "cobbled" (think cobblestone street) instead of smooth, hence the name cobbler. Pretty cool, eh? (I had a bit of a glass-shattering moment when I finally made that connection!) Take advantage of summer's bountiful produce with these easy cobbler desserts today.

This peaches and berries dessert bakes up right on the grill and is best when paired with vanilla or bourbon ice cream. To make an easy "oven," simply cover your cast-iron skillet tightly with aluminum foil.
Peach cobbler, the most popular of the cobblers based on search volume, is given an extra special creamy twist in this Peaches 'n' Cream cobbler recipe. In fact, you might not even need to top this cobbler with ice cream or whipped cream--although, no judgment from me if you do!
Satisfy your sweet tooth with this vibrant and strikingly colorful blueberry dessert. As the blueberries bubble and burst their color and flavor becomes more concentrated making this dish a knock-out. While you can make this cobbler with frozen blueberries, I always go for the fresh variety when available.
Not all cobblers have to be sweet! Try this savory pizza cobbler as an alternative to your normal weeknight casserole. Wanna make this dish vegetarian for Meatless Monday? Substitute broccoli or any other veggies in place of the pepperoni.
