For a zesty, slightly spicy kick, mix finely chopped fresh cilantro, jalapeño chile, and lime zest.
Toss finely chopped watermelon, cucumber, and radishes with a squeeze of lime juice, then season. (This one is especially good with steak.)
Mix sour cream with some adobo sauce from a can of chipotles in adobo, thin with a little water, then season with salt. Drizzle over tacos—or rice and beans.
