In this version of linguine con le vongole, I use quohogs, which are clams native to Rhode Island. As always, I melt a few anchovies into the olive oil before I add the garlic, clams, and wine. So R.I., meet R.R.

If you love clams, buy a clam knife for shucking. They're very affordable and available online.
