How many times have you bought an entire ginger root, used only an inch or two, and then found the rest shriveled in the fridge weeks later? Next time, while it's still fresh, break it into pieces, peel it, put it in a resealable bag, and stash it in the freezer. It'll keep its zing for months. Plus, frozen ginger is a breeze to grate.
