Cooking links on the grill can be tricky. If the heat isn’t just right, you can get sausages that are burnt on the outside and raw in the middle: Yuck! Use our simmer-sear method. First, arrange the sausages in a large skillet and add enough water (or beer or stock) to cover. Bring to a simmer over medium-high heat on the grill or stove, then reduce heat to medium-low (or move the sausages to indirect heat) and cook until the sausages reach an internal temperature of 150°, about 10 minutes.
