6 Flavor Twists on Turkey

Use our Classic Roast Turkey recipe, then make it your own with one of our six flavor combos. We're breaking each one down, so you'll know exactly what to put under the skin, inside the cavity and on top of the roasted bird!
Buffalo-Spiced Turkey
Under the skin: 6 tbsp. soft butter mixed with 1/4 cup chopped celery leaves and 1/2 tsp. celery salt.
In the cavity: 2 ribs celery and 2 carrots, cut into 2-inch pieces.
On the roasted bird: 1 tbsp. hot sauce mixed with 1 tbsp. EVOO
Little Italy Turkey
Under the skin: 2 tbsp. EVOO mixed with 2 tbsp. chopped rosemary.
In the cavity: Sliced garlic, Parmesan rind.
On the roasted bird: EVOO; sprinkle with chopped oregano and thyme.
Latin Lover Turkey
Under the skin: 4 tbsp. soft butter, 2 oz. thinly sliced chorizo and 2 tbsp. chopped cilantro.
In the cavity: 2 sliced limes, 1/2 bunch cilantro, 2 crushed garlic cloves.
On the roasted bird: EVOO; sprinkle with cilantro.
South of France Turkey
Under the skin: 8 thin lemon slices.
In the cavity: 2 sliced shallots, 2 sliced lemons, 2 sprigs tarragon.
On the roasted bird: EVOO; sprinkle with finely chopped marjoram and rosemary.
Cranberry-Glazed Turkey
Under the skin: 4 tbsp. soft butter mixed with 2 tbsp. chopped sage.
In the cavity: 1 orange and 1 onion, chopped.
On the roasted bird: Boil down 2 cups cranberry juice to 1/2 cup. Brush on 2 tbsp. (use the rest in gravy).
Maple-Apple-Bacon Turkey
Under the skin: 4 oz. thinly sliced bacon in a single flat layer.
In the cavity: 2 sliced shallots, 1 sliced apple, 1/2 bunch parsley.
On the roasted bird: 2 tbsp. melted butter mixed with 1 tbsp. maple syrup
