Tender, tasty chives are a pretty finishing touch for dishes, but not if you squish them flat as you slice. For quick, clean cuts, try this culinary school hack: Dampen a paper towel and fold it lengthwise until you have a one- to two-inch-wide strip. Bundle up your chives and wrap the paper towel around them, about two inches from the ends. The paper towel keeps the slippery stems together, providing stability and support. As you cut, keep sliding the paper towel ring up. Now get to garnishing!
