What to look for:

Select fruit heavy for its size and plump to the touch.

Tangerines won't ripen once picked, so avoid rock-hard fruit.

Look for a smooth, shiny peel that's a vibrant shade of orange.

Store at room temperature for 3 days or in a refrigerator for up to 1 week.

How to use it:

Stir grated peel into batter for cakes, cookies, pancakes and even fried chicken.

Mix grated peel with finely chopped parsley and garlic to sprinkle on braised meats.

Toss whole segments with salads.

Fold chopped segments into rice pilafs and stir-fries.

Use the juice in marinades, salad dressings and pan sauces.

Brush the juice over roasted chicken.
