Yellow Beet & Chipotle Salsa

Ingredients

  • 3/4 lb. yellow beets (cooked, peeled, and diced)

  • 2 tbsp. chopped fresh cilantro

  • 2 tbsp. fresh lime juice

  • 2 tbsp. EVOO

  • 2 1/4 tsp. adobo sauce (from canned chipotle chiles in adobo sauce)

  • 1 tsp. finely chopped garlic

Preparation

Toss 3/4 lb. yellow beets (cooked, peeled, and diced), 2 tbsp. chopped fresh cilantro, 2 tbsp. fresh lime juice, 2 tbsp. EVOO, 2 1/4 tsp. adobo sauce (from canned chipotle chiles in adobo sauce), and 1 tsp. finely chopped garlic. Season.
