Shaved Zucchini Salad with Cherries & Basil

  • 2 zucchini
  • 2 tbsp. fresh lemon juice
  • 2 tbsp. EVOO
  • 1/2 cup grated Parmesan
  • 1/2 cup pitted cherries
  • Sliced fresh basil


Using mandolin or vegetable peeler, slice zucchini lengthwise into thin ribbons. In medium bowl, toss with lemon juice, EVOO, then cheese; season. Toss in cherries and basil.

Perfect Bites (pictured): Turn this salad into finger food! Halve the zucchini ribbons lengthwise, skewer with cherries and sprinkle with the remaining ingredients.
