Raspberry Danish Grilled Cheese

The sweet combo of mascarpone, raspberry jam, and brioche is great for dessert—or breakfast!

Makes 4 Servings



  • 4 tbsp. softened butter

  • 1/4 tsp. lemon zest


  • 8 slices brioche


  • 3/4 cup mascarpone


  • 1/4 cup raspberry jam

  • 1/4 cup toasted almond slices


Heat a griddle or large cast-iron skillet over medium. In a small bowl, mix the butter and the lemon zest. Slather on one side of each slice of bread. Build sandwiches with the mascarpone, jam, almond slices, and bread, spread-side facing out. Cook, turning once, until the bread is toasted and the cheese is melted, about 3 minutes per side.
