Green Curry Shrimp Skewers

Ingredients

  • 1 lb. medium shrimp, peeled and deveined

  • 2 tbsp. green curry paste

  • 1 lime, 1/2 juiced (about 1 tbsp.) and 1/2 cut into wedges

  • 1 tbsp. coconut oil

  • 3 tbsp. toasted coconut flakes

  • 2 tbsp. chopped fresh cilantro

  • 1 red Thai chile, thinly sliced and seeded

Preparation

In bowl, toss shrimp, curry paste, and lime juice; season. Let marinate for 10 minutes. Thread shrimp onto skewers. On grill pan, cook shrimp in oil over medium-high until charred in spots, about 2 minutes per side. Garnish with remaining ingredients. Serve with lime wedges.
