Bok Choy & Scallion Slaw

Think outside the box when it comes to grilled vegetables. This crowd-pleasing side packs a ton of flavor and is super easy to make.

Ingredients

  • 6 baby bok choy (about 24 oz. total), halved

  • 3 bunches scallions, trimmed

  • 3 tbsp. olive oil

  • 3 tbsp. fresh lime juice

  • 3 tbsp. toasted sesame oil

  • 1 Fresno chile, thinly sliced

  • 1/3 cup chopped dry-roasted peanuts

Preparation

Drizzle bok choy and scallions with olive oil; season. Grill over high heat, turning once, until charred, about 8 minutes. Let cool; coarsely chop. Toss with lime juice and sesame oil. Top with chile and nuts.
