Blueberry & Jicama Salsa

Ingredients

  • 6 oz. fresh blueberries

  • 1 cup matchstick-size pieces of jicama

  • 2 tbsp. chopped fresh cilantro

  • 2 tbsp. chopped red onion

  • 2 tbsp. olive oil

  • 1 tsp. fresh lime zest plus 1 tbsp. juice

Preparation

Toss 6 oz. fresh blueberries, 1 cup matchstick-size pieces of jicama, 2 tbsp. chopped fresh cilantro, 2 tbsp. chopped red onion, 2 tbsp. olive oil, and 1 tsp. fresh lime zest plus 1 tbsp. juice. Season.
