Antipasti Salad

Ingredients

  • 1 shallot, minced
  • 2 tablespoons plus 1 1/2 tsp. olive oil
  • 1 tablespoon plus 1 1/2 tsp. Champagne vinegar
  • 5 ounces mixed greens (6 cups)
  • 1/2 head radicchio, torn
  • 2 ounces prosciutto, torn
  • 1/3 cup thinly sliced basil
  • 3/4 cup mini mozzarella balls
  • 1/3 cup large green olives, pitted and halved

Preparation

In large bowl, whisk shallot, oil and vinegar; season. Toss with greens, radicchio, prosciutto and basil; season. Top with mozzarella and olives.
