Snacks in a snap: Quick Brandied Cherries. Here's what you'll need: 1 lb. frozen bing cherries, 1/2 cup water, 1/4 cup brandy, 1/2 cup light brown sugar, 1 tsp. vanilla extract, 13 inch strip lemon zest, 3 whole cardamom pods, 4 whole allspice berries, and pinch of salt. Simmer 1/2 cup water, 1/2 cup brown sugar, lemon zest, 3 cardamom pods, 4 allspice berries and a pinch of salt for 5 minutes. Remove from heat and add 1 lb. frozen cherries, 1/4 cup brandy and 1 tsp. vanilla extract. Let cool and transfer to a jar. Refrigerate for at least 2 days. Use in cocktails or serve with ice cream.
