Swap out the cheese in your go-to quesadilla recipe for some pumpkin puree for a festive fall snack in a snap!
Snacks in a snap: Pumpkin Quesadillas. Here's what you'll need: 2 cups canned pumpkin puree, 1 tsp. ground cumin, 8 flour tortillas, 4 oz. goat cheese, 1/2 cup chopped walnuts, and 1/4 cup vegetable oil. Stir together 2 cups pumpkin and 1 tsp. ground cumin. Spread over 4 tortillas. Sprinkle with 1/2 cup walnuts and 4 oz. of goat cheese. Top with 4 tortillas. Heat 1 tbsp. oil over medium-low heat.
